When we got together with the Herndon, VA based team from Aslin Brewing Company, we decided to change things up from normal sour procedures and counterbalance that component with some big juicy hop notes. We brewed this beer and added lactobacillus to create a balanced tart note before fermenting with brewers yeast and dry-hopping it with Azaaca & Calypso hops and finishing it with Citra Lupulin Powder. The result is a hybrid sour ale with a pronounced hop character with little to no perceived bitterness. One could say that we indeed “flipped the script”.
